It only comes around every four years: It’s Leap Day, February 29th, and 2008 is the year for it. If you’re reading this later, you don’t have to wait until the next leap year in 2012 to enjoy these fun frog cupcakes. They’re hoppin’ good for any occasion.
What You Need: 1 cupcake; white frosting; green fondant; circle cutter; gummy frog; candy flower (or piped icing flower).
How to Make It: Frost cupcake. Roll out fondant (see our cupcakes and fondant page for tips) and cut out circle. Then cut triangle-shaped notch out of circle so it looks like a lilypad. Use dabs of icing to stick gummy frog and flower to lily pad.

February 21, 2008 is the night of a total lunar eclipse, and if you’re planning a big eclipse party, these cupcakes will surely “eclipse” all the other treats. If you’re reading this post-eclipse, not to worry. These cupcakes would be great for any sky-themed or solstice party. And don’t limit yourself to the shape shown. You could do a whole cupcake series featuring the phases of the moon.
What You Need: 1 cupcake; white frosting; blue sugar sprinkles (or just use blue-tinted or chocolate frosting); yellow fondant, rolling pin; circle-shaped cutter; spatula or other tool to cut moon shape.
How to Make It: Frost cupcake and add sprinkles. Roll out yellow fondant. Cut out circle. Then use circle cutter or spatula to cut out part of the moon. If you don’t have fondant, try rolling out a yellow gumdrop or use fruit rolls.

Celebrate President’s Day by reliving the “George Washington chopped down the cherry tree” legend in cupcake form.
What You Need: 1 cupcake (baked and cooled); white frosting; 1 slim stick pretzel; bit of purple or other dark fruit leather (we used Stackers); cherry sour candy; scissors.
How to Make It: Frost cupcake. Use scissors to cut ax head shape from fruit roll or snack. Use dab of icing to stick ax head to pretzel and place on cupcake. Add red cherry candy.

Of all the things George Washington is remembered for, there’s always that darn cherry tree. Did it really happen? Who cares; any excuse to make cupcakes! Consider adding cherry flavoring or filling to these cupcakes to complete the feeling. You don’t have to wait for Presidents’ Day to make these cupcakes. They’d be great for any cherry themed occasion, from gambling to a kids’ party.
What You Need: 1 cupcake (baked and cooled); white frosting; pastry bag and 1M star tip; gummy cherry with stem.
How to Make It: First, make swirl with 1M star tip: While squeezing out icing, move arm in a circular motion and cover the top of the cupcake with a swirl of icing. Then, starting a little bit in from the edge this time, make a second swirl on top of the first one. Add gummy cherry and that’s it!

If you’re as lucky as us, you’ll walk into a candy store one day and find a chocolate, foil-wrapped Lincoln penny. And, at Easycupcakes.com, when life hands us chocolate Lincoln pennies, we make cupcakes.
What You Need: 1 cupcake (baked and cooled); white frosting; large red and blue star sprinkles; foil-wrapped chocolate Lincoln penny; pastry bag and 1M star tip.
How to Make It: Fit pastry bag with 1M star tip and fill bag halfway with white frosting. While squeezing out icing, move arm in a circular motion and cover the top of the cupcake with a swirl of icing. Then, starting a little bit in from the edge this time, make a second swirl on top of the first one. Place coin in swirl and add stars.

What better way to celebrate Presidents’ Day and honor the United States’ 16th president than with tasty log cabin cupcakes? What You Need: 1 cupcake (baked and cooled); green frosting; slim stick pretzels; white writing icing or white icing in pastry bag with medium round tip (we used #5).
How to Make It: Frost cupcake. Immediately arrange pretzels in log cabin shape, breaking pieces to form room and chimney. Pipe white door and window. Have fun; be creative.

Make quick clovers for St. Patrick’s Day and your cupcakes will have the luck of the Irish. Enjoy them with a shamrock shake.
What You Need: 1 cupcake (baked and cooled); white frosting; green mini M&Ms (or regular for larger shamrocks); strands of green sour candy.
How to Make It: Frost cupcake. Arrange M&Ms in groups of 3. Snip or cut off short lengths of sour candy to make stems and add to cupcake.
